But from my point of view, it is actually high tech, which is rarely in use anymore, because it got replaces by different practices. The connotation of "low tech" does not really apply, because you need a lot of skill and knowledge to practice this kind of technology.
just take the #Water #Mill. It was a thing of highly specialist practices all along, from #planning, #building, #maintaining, shrinking, expanding, connecting. There are water mills around, which are working with 300+ years parts, sometimes working with much older grinding gear.
having "#high #tech" and "specialised #practices" does not mean the same as need a colledge or higher degree to understand, build and maintain it.
